General Manager and sommelier at Gatsby’s, brings a wealth of fine dining experience and a sharp eye for detail to every element of service. With a deep commitment to guest experience, Jay leads the front-of-house team with a customer-first philosophy and a dedication to excellence that defines Gatsby’s intimate, high-end atmosphere. He oversees staff training with precision, ensuring each team member delivers attentive, seamless service that complements the exceptional culinary offerings. A passionate sommelier, Jay takes pride in guiding guests through the thoughtfully curated wine program, helping each guest select the perfect pairing to elevate and enhance their meal.
Chef de Cuisine at Gatsby’s, brings a rich and diverse background to this intimate, chef-driven dining experience. Originally from Calgary, he discovered his passion for the restaurant industry while working in hospitality during his time in Toronto, where he apprenticed for Dave Mottershall at Loka, an innovative zero-waste restaurant focused on locality and seasonality. He then began training at Toronto’s Michelin Guide Restaurant La Banane, where he rose to chef de cuisine while it ranked among Canada’s top 100 restaurants.
After studying environmental stewardship under Magnus Nilsson at Copenhagen’s MAD Academy and working on an urban farming project in Calgary he returned to the kitchen lead a tight-knit team at Gatsby’s. His tasting menus—offered in six- and nine-course formats, including a vegetarian option—celebrate seasonal Canadian cuisine with French influence, using the finest ingredients from across Western Canada. Engaging directly with guests, Wilson brings a personal, curated approach to fine dining rarely seen in Calgary.
From an early age, the kitchen always felt like home for Anton Ksondzyk, Sous Chef at Gatsby’s. He grew up watching his mother prepare hearty meals, and it quickly became clear that food was his true passion. Although he initially pursued a different path—earning a Master’s degree in Linguistics in Ukraine—the intricate blend of art and science behind professional cooking eventually drew him to a culinary career.
His journey began 14 years ago in a Georgian restaurant in Ukraine. While his skills were modest at the time, his foundation in classical techniques and innate creativity shaped his evolving style. Over the years, he refined his craft in kitchens across the globe. Notably, he spent nearly nine years at sea, working on cruise ships and rising from Commis de Cuisine to Executive Sous Chef. In that role, he led teams and contributed to the service of thousands of dishes daily. His time as a private chef aboard a luxury yacht, where he spent two years providing Michelin-level cuisine to an exclusive clientele, was another significant chapter in his career.
